…is the passion of the fine distillery Prinz. Not far from the shore of Lake Constance, where fruit has always been grown, the history began almost 140 years ago as a small cider factory and cooperage. Since that time, the processing and refinement of high-quality fruit has been the focus of our activities.
The knowledge of traditional production processes and the quality of excellent fruit has been passed on from generation to generation and gradually improved. Even today, it is our aim to preserve traditional craftsmanship and combine it with innovative methods.
FROM FRUIT GROWING TO ENJOYMENT
LAKE CONSTANCE AS A FRUIT-GROWING REGION
The location on the Austrian shore of Lake Constance is perfect for growing many types of fruit. Pome fruits in particular – such as Williams pears, apples and quinces – but also various types of berries thrive here particularly well. While the fall winds at the foot of the Alps warm up the meadow orchards during the day, the lake provides the necessary temperature compensation and a moderate microclimate throughout the year. In this way, late-ripening fruits also have the time to develop their full ripeness.
THE SECRET OF DISTILLING
The traditional craft, which has been handed down for almost 140 years, forms the basis of the daily work in the distillery in connection with the most modern technologies. The wealth of knowledge and experience has grown over the generations and this is how tradition and innovation are combined. State-of-the-art technologies are combined with a sensitivity for the product and the raw material. The fruit mash has been distilled into a highly aromatic fruit distillate using the vacuum distillation process for 20 years. During the combustion process, the air pressure in the boiler is the same as on the summit of Mount Everest. As a result, the boiling point of the alcohol can be reduced by almost 30 °C. Although the firing process takes longer, it results in significantly more expressive fruit brandies. Due to the lower temperature, the burning process is gentler and the complex fruit aromas are preserved. A nice side effect is that it also saves energy.
